Doughnuts with Saint Agur blue cheese pear compote

  • For the pear compote

  • 3 pears

  • 2 tbsp. sugar

  • 1 pack bourbon vanilla sugar

  • 100 ml apple juice

  • 60 g Saint Agur

  • For the doughnuts

  • 2 large pears

  • 2 eggs

  • 125 g wheat flour

  • 0.5 tsp baking powder

  • 1 pinch of salt

  • 1 pinch of cinnamon

  • 100 ml mineral water

  • Vegetable oil for frying


  1. For the compote: start by peeling the pears, removing the core and cutting them into small cubes. In a saucepan, melt the sugar and vanilla sugar and caramelise the pear cubes. Deglaze with the apple juice. Let the compote simmer for a few minutes then remove and let it cool a bit.

  2. For the doughnuts: peel the pears, remove the core and cut them into even thick slices. Separate the eggs and beat the egg whites to stiff peaks. Mix the flour with baking powder, sugar, salt and egg yolks with a hand mixer. Gradually stir the mineral water into the dough. Finally, fold in the egg whites.

  3. Heat plenty of oil for frying. Dip the pear slices one after the other into the doughnuts’ dough and fry in hot oil until golden brown, about 3-5 minutes. Turn halfway through.

  4. Take out the cooked doughnuts with a slotted spoon and drain on kitchen paper. Cut the Saint Agur into cubes and fold into the pear compote. Serve the doughnuts still hot with the Saint Agur pear compote.

  5. Tip: make sure the pears that are dipped into the doughnut dough are quite firm as they will soften when fried.
